"We tried this and it was good"- Oatmeal PB Cookies.

My friend Leah, over at Brownell Bootcamp sent this recipe out to us last week and I tucked it away for a quarantine day activity. They didn't turn out as pretty as her's did but they sure are tasty! Packed with nutrition from peanut butter, banana, and oatmeal, this is a less guilty treat to whip up in just a few minutes.



INGREDIENTS:

For Cookies-

2 ripe bananas

1/2 cup peanut butter

2 cups rolled oats

Pinch of salt

For Filling-

1/2 cup peanut butter

1 tbs pure maple syrup (Like Grade A Stuff in the little glass jars!)







INSTRUCTIONS:

Preheat oven to 350 degrees.

Peel and place bananas in a large bowl. Mash until all the lumps are out and you have a paste.

Add peanut butter to the mashed bananas and mix well.

Finally, add the oatmeal and pinch of salt and mix well.

Form the cookie “dough” into roughly 1 inch round balls and place on a greased cookie sheet. Flatten the cookies out either with a fork or with your hands. **You can make the cookies bigger or smaller, but be sure to have an even number of cookies to make the sandwiches.

Bake cookies in the oven for 15 minutes, or until they are a light brown shade.

Meanwhile, mix 1/2 cup peanut butter with 1 tbs maple syrup and set aside.

Once the cookies are done, remove from the oven and place on a cookie rack to cool. Make sure cookies are completely cooled before assembling the sandwiches or the filling will melt.

Take about 1 tbs of the filling and spread on one cookie, then place another cookie on top.


Bam! A power snack/dessert/comfort food/kid project/just make these because they're yummy!
